Elettra Wiedemann understands the importance of mindfulness. The model and food expert (Wiedemannn founded hit site Impatient Foodie, helmed Refinery29’s food vertical, and has been featured everywhere from Vogue to Elle to Yahoo) has flourished in her culinary career through that very ethos but with a busy-body twist.

Wiedemann is of the philosophy that good, “slow” food doesn’t need to be, well, slow. And, that delicious healthy meals can and should be accessible for folks who simply don’t have enough hours in the day. Sound familiar? 

She’s even penned a new cookbook — Impatient Foodie: 100 Delicious For A Hectic, Time-Starved World— on the matter.

Well, we were surprised to learn that Wiedemann’s ideology extends to her home as well. “I am actually terrible at decorating and very impatient,” says Wiedemann. “Our only rule is that nothing be precious — we want things to feel easy.”
