Puerto Rico’s growing farm-to-table and sea-to-land cuisine is blowing up. Chef Natalia Lucia Vallejo is a key player in this movement and often works with Visit Rico — an organization that creates agritourism experiences to support the local food production.

If you’re lucky enough to be in town during one of their events, it’s a unique (and delicious) way to experience the local cuisine. Chef Vallejo’s nasturtium leave rolls —a dish filled with a mouthwatering combination of quinoa and vegetables drizzled in a pumpkin and coconut sauce— is the kind of inventive culinary creation you’ll get to savor.
