Brie Puffs
Serves 8

"The breadbasket is often overlooked during the holidays, and why should it be? Bread is the best side dish on the planet. Even Oprah thinks so," quips Keefe. "That being said, elevate your pop-and-bake biscuits of rolls (not naming any names…) and cut frozen puff into squares topping with brie or whatever random cheese you have in your refrigerator." 

1 frozen sheet puff pastry, cut into 8 squares
Extra virgin olive oil
8 pieces of brie, about the size of the puff, leaving a bit of a border
2-3 sprigs rosemary
1 teaspoon red pepper flakes
Maldon salt, garnish

1. Preheat oven to 425° F.

2. Line a sheet tray with parchment paper and evenly space the puff squares. Poke the center area (where the brie will be) of each square and drizzle all with olive oil. This will prevent the pastry from puffing up and causing your cheese to slide off. 

3. Top each with a slice of brie, leaving a border along each puff – like you would with pizza crust.

4. Top each puff with a few rosemary sprigs and red pepper flakes and bake for 20-25 minutes until golden brown and puffed up.

5. Garnish with more rosemary, red pepper flakes and Maldon salt.
